Prep time: 30 Minutes + pre soaking

Yield: Makes 1 Pie (26 cm diameter)

Directions:

  1. Place all crust ingredients into your food processor and blend until dough-like (If your mixture is not sticking add a couple tbsp of warm water and mix again).
  2. Evenly press down crust into each tin as thick or thin as you would like. Place muffin tin in the freezer while you prepare filling.
  3. Place all blueberry pie filling in the blender and blend until completely smooth (stopping to scrape down the sides).
  4. Evenly spoon pie filling on to the crust and spread evenly.
  5. Put in a freezer for an hour and then serve.
  6. Enjoy!
  7. Store this recipe in a sealed-tight container in the refrigerator.
